Healthy, quick and easy vegetable fritters loaded with beans and a ton of veggies.
Such a great way to get a heap of veggies into your kids! You can pretty much put anything into these; corn, carrot, grated zucchini……… this is my version;
vegetable fritters
4 sprigs parsley
2 handfuls baby spinach
250g can of cannellini beans
150g potato
100g broccoli stalk
50g cauliflower
1 clove garlic
½ brown onion
1 egg
70g wholemeal plain flour
THERMOMIX METHOD
Place parsley and spinach into mixing bowl and chop 3 sec / speed 7. Scrape down sides and repeat then set aside. Place cauliflower, beans and potato in mixing bowl, chop 4 sec / speed 5. Place into TM basket and press out any excess liquid. Place onion, garlic and roughly chopped broccoli stalk into mixing bowl and chop 3 sec / speed 7. Scrape down sides and repeat. Return all the ingredients to the mixing bowl, add the egg, flour, salt and pepper and mix 12 sec / speed 4.
Heat a little oil in a fry pan over med-high heat and add heaped spoonfuls of mixture. Cook for 4-5 minutes on each side, pressing down a little after flipping. Cook until golden and firm through. Drain on paper towel before serving.
NON THERMOMIX METHOD
Place parsley and spinach into a food processor and pulse until finely chopped, set aside. Add the cauliflower, beans and potato to the processor and pulse again until finely chopped. Remove and put into a strainer to press out any excess liquid. Place onion, garlic and roughly chopped broccoli stalk into the processor and pulse until finely chopped. Place all ingredients into a large bowl along with the egg, flour, salt and pepper and mix until well combined.
Heat a little oil in a fry pan over med-high heat and add heaped spoonfuls of mixture. Cook for 4-5 minutes on each side, pressing down a little after flipping. Cook until golden and firm through. Drain on paper towel before serving.
